98 is named with the idea that we will not make it to 100 by ourselves, but will make 98 to 100 or 200 by collaborating with various people. This philosophy remains an important theme for us even when it comes to beer. We want to cherish that feeling forever, so we named our standard series 98. A saison with a fruity citrus-like aroma and a sour aftertaste. ``Saison'' is said to be made by Belgian farmers during the off-season from winter to spring to quench their thirst during the summer farming season. Therefore, it was originally drunk 4-6 months after production, so if you store it in a place that is out of sunlight at the same temperature as a wine cellar, and drink it after some time, you can enjoy the change in taste due to aging.
Masu. While thinking about this history, 98's Saison has been created to match the soft water of this area, with a fruity and plump texture and a lingering acidity. Alcohol content: 5.5%. The brewing water used in our brewery is soft water from the Shioyama Hirasawa water system in Koshu City, and has a very mild taste. I want to preserve the characteristics of this water in my beer, so I use it almost without adjusting the water quality. As a result, each beer has a soft aftertaste, allowing you to enjoy the complex flavours of yeast, malt, and hops. In addition, all bottled products are made using `secondary fermentation in the bottle', so the carbonation is fine and gentle due to natural carbonation, making it recommended as a pairing with meals
